Being a mum to three busy, active kids and a wife to a hard-working husband, I need recipes that are easy and fuss-free. Nothing should take more than an hour, with most recipes averaging around thirty to forty minutes, many just twenty minutes. Why Meatless Monday?
Meatless Monday is a global campaign aimed at helping people reduce their intake of meat and increase their intake of fruits, vegetables, and whole grains.
Whether you decide to do this for one day, one week, one month, or forever after is a choice you need to make for yourself. Even one meal per week is a great start if you can’t commit to a whole day. This book will give you some great tips about how to get started, how to stock your pantry so a healthy meatless meal is always in reach, and even how to get your kids involved in the process.
- Furthermore Health: It’s no secret that consuming a variety of fruits and vegetables is good for your health. There is no better way to get your daily dose of vitamins, minerals, and fibre. These colourful plants, which are low in saturated fat, also bring us antioxidants and anti-inflammatory properties, which means a possible decreased risk of preventable disease. Are you worried about protein? Don’t be! There are plenty of protein-packed foods of the plant variety, such as beans, lentils, quinoa, wild rice, soy, nuts, and seeds. Even fruits and vegetables contain protein!
- The Environment: Ditching the meat could mean a decrease in water consumption and greenhouse gases, which is great for our planet.

Rice and Bean Pan-Grilled Burritos with Avocado Green Chile Sauce
A burrito is essentially a taco’s much larger and more filling brother. Tacos are generally served with sides to make a complete meal whereas a burrito is a complete meal in itself. Loaded with filling rice, protein-packed beans, fresh crunchy lettuce, and a swoon-worthy sauce, this is one meal that will surely leave you full and satisfied!
Brown Rice Bowls with Roasted Veggies and Chickpeas
Together with classic grains, veggies, protein, and sauce bowl. It’s all our favourites in one bowl drizzled with the most amazing sweet tahini sauce. The whole thing comes together quickly and easily, and everyone will clean their plates!
Vegan Scampi in Lemon Garlic White Wine Sauce
This is a really simple dish that tastes elegant. Hearts of palm are the perfect stand-in for scallops. They have a similar look when sliced and a briny quality reminiscent of seafood—great for those with a shellfish allergy.
Summer Vegetable Tomato Rice Skillet
In the same fashion / way the dish has all the wonderful flavors and textures of Ratatouille, a French vegetable stew. Here, I’m pairing it with fragrant Jasmine rice and a touch of miso paste for umami and it’s all done in one pot!
